TUSCAN Candlelight Dinner

• Crisp escarole salad with braised radicchio, goat cheese and toasted almond clusters, warm “pulled bread” baked in fennel dust and homemade raspberry vinaigrette.
• Countryside beef tenderloin seared in Rosemary infused artisan butter topped with wild mushroom and caramelized local sweet onion ragu and satin pan juices.
• Fresh local berries with a touch of local wild honey and handmade lavender cream.

TOKYO Sushi Bar

• Imported edammame (boiled soy beans in the pod) lightly salted and toasty warm.
• Homemade miso soup with crisp, local veggies and slightly sweet/salty wasabi crackers.
• Spicy tuna rolls, crisp veggie rolls, braised crispy grouper rolls, and sashimi rolls. I use local veggies and only the freshest local seafood-- right off the boat just hours before serving you! (Special request rolls must be confirmed before event)
  -ask about my all night “SUSHI PARTY”! It’s a hit!!

Caribbean Escape!

• Fresh island salad with a crisp trio of lettuce, red cabbage and greens-topped with shaved Jicama, seared pineapples, roasted nuts and a light coconut dressing.
• Tender chicken or pork tenderloin--marinated in fresh cilantro, brown sugar, ginger and garlic-all seared to perfection. Topped with a spicy-sweet mango salsa. Side of Chef Shawn’s famous long-cut crispy slaw and braised yam hash.
• Sweet, crispy-fried plantains drizzled with imported rum, cinnamon and local honey syrup. Complete with hand-blended clove and vanilla ice cream.

Every delicious dish is made with fresh local seafood, vegetables, and herbs.

Roll up your sleeves for this one! It’s all local! Fresh Seafood, veggies and meats from local farms and fishermen--this is the way locals like to eat! We’ll even pick up the beer and wine and put it on ice to keep you refreshed and cool while you’re diggin’ in!

Steaming, Fresh Clam Bake (local clams, roasted corn, tender new potatoes, roasted garlic bread, fresh squeezed lemons, melted drawn butter).
Creamy Seafood Chowder (local tender shrimp, and clams in a delicious white wine cream chowder) southern fried cornbread with local honey.
Mixed Grill (local sweet grouper, tuna or snapper grilled to perfection with a lemon herb butter, side of local grilled corn on the cob, with warm butter breadsticks and crisp fresh Salads).
Apple Betty with Pure Vanilla Ice Cream, Southern Style Banana Pudding with Chocolate drizzle, or REAL Key Lime Pie!

Salute! Chef Shawn takes you to Bergamo Italy for an Amazing taste escape! A handmade, authentic and mouthwatering feast to remember!
We can also offer the perfect wine parings to compliment your entire meal, and bring the wine to you! Bella!

Choose from our Sample menu:
Starters: Sautéed clams in garlic butter and basil, grilled prawns salvia, toasted panzanella salad with crisp arugula.
Entree: Fettuccine and garlic roasted eggplant, risotto Del Giorno (seafood, veal or vegetable), scaloppini of veal or chicken in sage butter, braised lamb in white bean savory stew and toasted herb wine sauce.
Dessert: Tiramisu with bittersweet chocolate shavings, grilled bread and sweet Arborio rice pudding, poached pears in lavender and honey.
